<p>Corn is something, which everyone is already quite familiar with; after all, this grain (which is often eaten as a vegetable) is a staple of American cooking but in Mexico, corn is a food, which has a great importance to the country&#8217;s culinary tradition. From salads to soups, salsas and of course, as the basis for tortillas, corn shows up in a great number of <a href="http://www.mexicanfoodrecipes.org/Mexican-Recipes/index.php#easy-mexican-recipes">easy Mexican recipes</a> in one form or another.</p>
<p>This grain has been a staple food in Mexico since long before the arrival of Europeans on the continent. Used to make flour for tortillas, tamales and a variety of other dishes, corn was already central to Mexican cooking centuries, if not millennia before the Spanish came over in search of gold. The corn-based flatbreads acquired the name &#8220;tortillas&#8221; upon the Spanish conquest of what is now Mexico, after the Spanish word for &#8220;little cakes&#8221; (a name also given to omelets in Spain).</p>
<p>Tortillas are well known in the US. Even though flour tortillas are more widely available than are corn tortillas, you can now find corn tortillas at most groceries and these more flavorful tortillas are catching on with the public. It is understandable; if you have ever made tacos using soft, warm corn tortillas, you know that there is no comparison between these and flour tortillas.</p>
<p>Another Mexican recipe, which features corn as the most important ingredient, is the tamale. This classic Mexican comfort food has been around for many centuries and may be served as part of dinner, lunch, or even breakfast! Tamales are made from corn flour dough filled with meats, cheeses, or vegetables and steamed inside of a cornhusk. Somewhat similar to Italian polenta, tamales are even made in sweetened or fruit filled versions, which are great for dessert or breakfast.</p>
<p>Tamales are rather labor intensive to make, but this savory (or sometimes sweet) corn flour wrapped in a corn husk is something well worth the couple of hours it takes to make &#8211; served at a dinner party, they&#8217;re sure to impress.</p>
<p>Corn is sometimes used in salsas, where its flavor blends perfectly with tomatoes, herbs, and peppers. One common combination is black beans and corn, which makes a very satisfying salsa; you might have even seen some of these salsas at your local grocery store. Corn salsas are great with tortilla chips and wonderful with a taco (made with a warm corn tortilla, of course) or tamale.</p>
<p>Mexican soup recipes also include some with corn in a prominent role. For example, pozole &#8211; a spicy hominy soup with pork, herbs and hot peppers. The flavor of corn works perfectly with the peppers and meat to create a classic soup, which is a satisfying meal in itself.</p>
<p>You may even be lucky enough to have a restaurant which specializes in this Mexican corn soup near you (these restaurants are known as pozolerias) if you live in a location where there is a large Mexican immigrant community. However, it is also pretty easy to make your own. It is a great change of pace when you are looking for a warming soup in the fall or winter and it just may become a family favorite.</p>

<p>Sirloin is a term referring to steak that comes from the lower part of the beef ribs, continuing from the prized tenderloin. Sirloin is considered a high quality, flavorful cut, but can be tougher than the most prized steaks. The sirloin itself is divided into many different types of steak.</p>
<p>The most valued of these steak types is probably the top sirloin. This cut is a little hard to find unless you are specifically looking for it &#8211; the majority of steak listed as sirloin will actually be bottom sirloin, which is a larger piece of meat, more readily available, cheaper, and tougher. The bottom sirloin is also connected to the sirloin tip roast, a good but somewhat tough roast that should not be eaten as a steak.</p>
<p>Tri-tip steak is one of the most robustly flavored parts of the bottom sirloin, but is quite lean and easy to overcook. Sirloin pin bone steak comes from the front of the sirloin, and has an oval pin bone in it that gives the steak its name. A sirloin flatbone steak can be identified by the flat hip and backbone pieces it has inside.</p>
<p>Sirloin round bone steaks contain less bone than most other sirloin steaks, and are rather less fatty. Sirloin wedge bone steaks come from the rear of the sirloin, and contain a small wedge shaped bone. All these different types of sirloin steaks should be available at your local market.</p>
<p>Sirloin cuts tend to be lean, not as buttery and tender as higher end steaks, but with a deep rich flavor and lower price. They work well when prepared using dry heat, meaning that pan frying, roasting, grilling, sauting, broiling and similar methods are a good choice for cooking sirloin steak. <p>Make sure you decide to buy sirloin steaks that have a clear, red color. This color comes from exposure to oxygen &#8211; steak is usually purple before the air touches it. Sirloin steak should be cold and neatly packaged, with firm meat that is ready to eat. Store it in the coldest part of the refrigerator for only a few days. External fat can be trimmed before or after cooking.</p>
<p>At 145 degrees Fahrenheit, a steak is medium rare. At 165 degrees, it is well done. A meat thermometer can tell you these temperatures. Use tongs, not a fork, to turn steak, since piercing it will cause the juices to be lost. Let the steaks rest for five to ten minutes to keep this from happening when the steak is cut.</p>
<p>You can broil steaks in a pan two to four inches from your heat source &#8211; it takes only eight to ten minutes. Grill steaks for six to eight minutes, lightly brushed with oil, or pan broil them on the stovetop for thirteen minutes to a quarter hour.</p>

<p>It&#8217;s a well-known fact that coffee keeps you awake. It&#8217;s similarly well-known that this is down to the fact that coffee contains caffeine. But do you know why it is that caffeine has this effect? Is it the caffeine itself? Or is something else going on in your body to stop you feeling drowsy?</p>
<p>Actually what caffeine does is to suppress the chemical in the brain that helps us to sleep. Scary as it sounds, caffeine serves to temporarily alter the chemical makeup of the brain, and leads to a naturally-occurring chemical, adenosine, not being able to do its job properly.</p>
<p>Adenosine is produced naturally in the body as a result of our daily routine. Our brains feature adenosine receptors, that this chemical binds itself to, which helps to slow down our brain&#8217;s nerve cell activity, leading us to get drowsy and fall asleep.</p>
<p>As a by-product of this binding, blood vessels within the brain are dilated, which serves to let more oxygen to the brain whilst you are asleep. It seems funny that one of the chemicals that is produced by exercise &#8211; adenosine &#8211; has the counter-intuitive effect of causing you to fall asleep, but natural that it would allow more oxygen in.</p>
<p>Nerve cells perceive caffeine as being similar in makeup to adenosine, so they allow it to bind to the adenosine receptors in the same manner. The effect is the opposite to what they expect, however, with caffeine serving to block the adenosine and thus increase nerve cell activity, rather than slow it down.</p>
<p>Caffeine also has the opposite effect from dilating the blood vessels, leading to them constricting. If you have particular types of headache, this is the reason some cures include caffeine, to restrict the flow of pain-causing blood cells getting to the brain.</p>
<p>As the caffeine is blocking the adenosine from slowing down nerve cell activity, there is increased activity within the brain. Our bodies then react by assuming we&#8217;re in some kind of threatening situation, so hormones are generated which trigger the release of adrenalin &#8211; the well-known &#8221; fight or flight&#8221; chemical.</p>
<p>Obviously, we know that a shot of adrenaline is not going to help you sleep, as it causes your muscles to tense up and your heart to beat faster. Which is why coffee can keep you awake; and why sometimes after you have a cup of coffee, you can feel your heartbeat increasing, and may even experience some form of &#8220;high&#8221;.</p>
